Food is such an important part of my life. Here I post the recipes I think are worth trying. I find my inspiration from all kinds of blogs, newspapers, magazines etc. and most of them I adapt to my own taste buds. I rarely write down the exact details or follow the recipes to the letter. It’s always worth experimenting before you get the results that might suit your own diet needs.

BLUEBERRY/BANANA PROTEIN PANCAKES

Delicious protein pancakes to eat before or after workout. Yummy!

Wet ingredients:

  • 2 egg whites
  • 70 gr organic skim milk
  • ½ banana
  • 1 dl frozen blueberries
  • 70 gr organic 4% cottage cheese

Dry ingredients:

  • 40 gr vanilla protein powder
  • 40 gr organic oat flour (if you don’t have oat flour at home, you can always take oatmeal and grind it up)
  • ½ tbsp cinnamon, or to taste

Mix the wet and dry ingredients seperately, then mix them together into a thick batter. Cook them in a non-stick pan sprayed with a low-calorie cooking spray.

Makes 2 servings. Total calories around 525 kcal.

COTTAGE CHEESE CAKE

 
Delicious cheese cake, perfect as a dessert. Makes 2 servings.
  • 2 organic eggs + 2 organic eggwhites
  • 1 scoop whey protein powder (I used Olimp vanilla flavour)
  • 300 gr organic cottage cheese, 4% fat
  • ½ tsp Stevia
Whisk eggs, eggwhites and Stevia really fluffy. Add the protein powder, mix it well. Finally, add the cottage cheese and stir it up. Divide the mixture and pour it into 2 oven safe pots or forms. Make sure the forms are tall enough for the mixture to rise without spilling over as it will rise quite a bit and then sink down to settle. No grease is needed if you use foil forms. It keeps the calories down as well.
Bake the cheese cake in the oven at 200 degree Celsius for about 40 minutes. Serve hot or cold with organic berries. YUM!
